The difference in temperature between day and night causes secretions in the oak leaves, and the liquid in the acorns is turned into honey by the bees. Oak honey is harvested at the end of the summer. It is mainly produced in the Kaz Mountains, Kapıdağ, Karadağ and Dursunbey regions. Oak honey is dark in colour. It is moderately sweet and has an intense, distinctive aromatic fragrance. Oak honey has more antioxidant properties than other honeys. It is also richer in phenolic compounds.
